YAM WRECK

 

I finished up a 14 mile training run this morning and this bowl of yumminess was just what I needed.

With an ideal balance of protein, carbs, fat, and fiber Yam Wreck is the perfect post training meal or a great staple to kick start your day on track.

I stole (which is a form of the highest flattery) this recipe from the CDA Firehouse. Adding in your own variations depending on your macro needs is easy to do to this base recipe.

Yam Wreck:

2 cubed yams 1 head chopped cauliflower 2 chopped bell peppers 1/2 a red onion Pam + EVOO spritz Sausage (I recommend a chicken or turkey sausage with lower fat)

In a pan sauté sausage, peppers, and onions. Preheat oven to 400 degrees. Add cauliflower and yams to baking sheet, coat with Pam and a spray of EVOO, garlic powder, salt, pepper and let bake for 20 min. Add in sautéed sausage/veggies, combine and bake for another 20-30 minutes- stirring every 10 min. Serve with an egg or egg whites and avocado!

If you’re looking to up the ante in the fiber department but keep your carbs down, add in brussel sprouts and asparagus!
