These ground turkey zucchini boats is one of our favorite quick and easy family recipes (and it tastes like lasagna)!
200g green bell pepper
6oz can of tomato paste
16oz extra-lean ground turkey (any ground meat works)!
1 T olive oil
1 tsp salt
1 tsp pepper
1 tsp garlic powder
120g shredded mozzarella cheese (use low fat to save some fat if needed).
Preheat oven to 350 degrees. Cut each zucchini in half length-wise. Scoop out the middle of each half with a spoon. Place hollowed out zucchini into a baking dish.
Dice all of the scooped-out zucchini and set aside. Add oil to a medium warm skillet and add diced onion and pepper and cook until softened. Add the ground meat to skillet and cook it through. Add the tomato paste, seasonings, and diced zucchini to the skillet and mix well.
Evenly scoop the turkey mixture into each zucchini boat. Top each boat with 15g shredded mozzarella cheese. Bake in oven for about 30 minutes, until zucchini is tender to cut with a fork.
Serves four, two zucchini boats per serving.
