Sausage, potato, and kale soup

There is something so comforting about warm soup on a cold day! 🍵This sausage, potato, and kale soup is the perfect meal to add to your family’s weekly rotation! 🍂⁣ ⁣ Ingredients⁣ * 8oz sweet or spicy ground Italian sausage⁣ * 8oz extra-lean ground turkey⁣ * 1 tbsp olive oil⁣ * 100g yellow onion, diced⁣ * 3 cloves of garlic, minced⁣ * 5 cups chicken stock⁣ * 24oz gold potatoes, peeled and diced into small pieces⁣ * 1 tsp basil⁣ * 1 tsp thyme⁣ * 1 tsp salt⁣ * 1/2 tsp white pepper⁣ * 170g to medium sized kale leaves (washes, stems removed, and torn into bite size pieces)⁣ * **Optional: red pepper flakes if you want a little kick! ⁣ ⁣ Instructions⁣ 1. In a large stock pot, add olive oil and a bit of cooking spray and heat on medium high. Combine the sausage/turkey and brown. Remove the sausage and set aside in a small bowl.⁣ 2. Add diced onion to the pot and cook about 5 minutes or until onions are soft and tender. Add the basil, thyme, salt, and white pepper, toasting the spices for 1 minute. Add the garlic and cook for 1 minute more, making sure not to burn.⁣ 3. Pour in the chicken stock and bring to a boil. Add the potatoes, and simmer on low for 25-30 minutes or until potatoes are fork tender. Add salt to taste. ⁣ 4. Add the kale and the cooked sausage and cook on medium-high heat for 3 to 5 minutes, or until everything is nice and hot and the kale has softened up.⁣ 5.
