Korean Ground Turkey and Cauliflower Rice Bowl

 
 

This sweet and spicy Korean dish is one of our family’s favorites for a quick and easy weeknight dinner! We love dinners where the family can build their own bowls based on their preferences and macronutrient needs!

Ingredients:

32 oz. ground meat of choice (we used extra-lean ground turkey)

8 oz. chopped yellow onion

2 tsp fresh grated ginger

1/2 cup soy sauce or coconut aminos

4 tsp brown sugar

2 tsp sesame oil

4 garlic cloves, minced

1 tsp crushed red pepper flakes

4 oz. cucumber, thin sliced

4 Tbs Gochujang sauce

1 Tbs sesame seeds

2 oz. scallions, sliced

24 oz. cauliflower rice (or white/brown rice if you have the macros to spare!)

Instructions:

Combine the soy sauce, 4 Tbs water, brown sugar, sesame oil, and red pepper flakes in a bowl. Heat a large skillet over high heat, spray with oil, and add the ground meat. Cook while breaking it apart, about 5 minutes. Add the onion, garlic, and ginger and cook one minute. Pour the sauce over the beef, cover and let simmer on low about 10 minutes. To assemble the bowls, add rice, meat, cucumbers, sesame seeds, scallions, and Gochujong sauce to each bowl (this sauce is spicy, so use discretion with the kids). Serves four huge bowls.
