Chocolate chip zucchini protein bread

 
 

This chocolate chip zucchini protein bread is perfect with a morning cup of joe, breakfast on the go, or as a lunchbox snack for the kiddos!

Ingredients:

1 egg

250g (about two whole) shredded zucchini

200g (1 1/2 cups) flour

5g (2 tsp) baking soda

1g (1/4 tsp) baking powder

70g (2 scoops) chocolate protein powder

125g (1/2 cup) raw honey

2T coconut oil

90g (1/2 cup) nonfat greek yogurt

75g chocolate chips (we used Lily’s dark chocolate chips)

Instructions:

Preheat oven to 350 degrees. Line loaf pan with parchment paper or lightly coat with oil. Combine the flour, baking powder, baking soda, and protein powder and set aside. Beat the egg, honey, and oil with a whisk. Add the yogurt and mix well. Add the flour mixture and zucchini and combine. Fold in the chocolate chips into the mix. Pour the batter into the prepared pan and bake for 40 minutes, or until a toothpick comes out clean.
