Here's our take on a caprese salad that could be a meal, a side dish, or a single serving.
We start with a base of spring green mix. Then we add raw sliced zucchini, quartered tomatoes, mini-mozzarella balls, cubed grilled chicken breast, fresh basil, and the balsamic dressing we posted about a few days ago.
There is really no "recipe" for this salad. You can build it or later it to fit your needs. Put your bowl on the scale and layer one ingredient, zero your scale, add another, and keep going until you have hit your macro goals.
If you need to make this in a big batch and then divide into 1/4s or 1/8s to eat then measure the total ingredients and divide by 4 or 8 when you log the recipe in MFP.
