Cantaloupe, Prosciutto, and Mozzarella Salad
This delicious salad is quick, easy, and is delicious for any meal of the day and also makes a great side for family dinner or a take-along side to summer gatherings!
Ingredients (serves one):
56g baby arugula
42g bite-size mozzarella
56g diced or sliced cantaloupe
28g thinly sliced prosciutto
1/2 TBS extra-virgin olive oil
1 TBS balsamic vinegar
Crisp prosciutto in air fryer or oven (375 degrees for 10 minutes). Place arugula on plate and layer with sliced cantaloupe and prosciutto. Gently tear mozzarella into pieces and scatter throughout salad. Season with salt and pepper and drizzle with vinegar and oil. Serve immediately.
