Kale Pomegranate Salad


85g kale 24g pomegranate arils 28g fat-free feta 3oz. cooked chicken 50g cooked quinoa


For the dressing: 1/2 tbs. olive oil 1 tbs. Apple cider vinegar 2 tbs. fresh squeezed orange juice 1 tbs. Dijon mustard Dash of salt


Mix all dressing ingredients in a mason jar. Pour dressing over chopped kale and massage until leaves are soft and tender. Cook quinoa according to package instructions. Brown chicken in pan and season with garlic, salt, and pepper (or use whatever you have leftover from meal prep)!

Layer salad with chicken, feta, quinoa, and pomegranate arils and enjoy!
