Grilled Bruschetta Chicken

 
 

This grilled bruschetta chicken is a summer staple and the perfect delicious weeknight meal thats ready in minutes!

Ingredients:

1.5 pounds thin-sliced chicken cutlets (about eight cutlets)

3 oz. part-skim mozzarella, diced

3 medium tomatoes

2 garlic cloves, minced

3 oz. chopped red onion

2 T fresh basil leaves, chopped

1 T balsamic vinegar

Salt and pepper

Instructions:

Combine onion, oil, balsamic, pinch of salt, and pepper. Set aside. Chop tomatoes and place in a large bowl. Combine with garlic, basil, and additional pinch of salt and pepper. Mix together both bowls and set aside for at least ten minutes (or up to overnight). Season chicken with salt and pepper. Preheat the grill to medium-high and grill the chicken two minutes on each side. Add cheese to the bruschetta. Plate chicken and top with bruschetta and serve.
