Gluten-Free Blueberry Muffins

 
 

This is the perfect recipe for on-the-go for busy mornings or a snack for the kiddos in their lunchbox. Only seven ingredients and done in less than 30 minutes, these muffins are easy-peasy!

Ingredients:

300g low-fat cottage cheese

72g coconut sugar

70g avocado or coconut oil

200g blueberries

67g pure maple syrup

185ml milk

240g rolled oats

Instructions:

Mix all ingredients together in a bowl. Fill lined 12-cup muffin tin with mixture. Bake in preheated oven at 375 degrees for 15-20 minutes.

Servings: makes 24 muffins.
