Curry Chicken Lettuce Wraps

 

1 lb of pre-cooked shredded chicken

4 oz  non-fat greek yogurt

1 TBS apple cider vinegar

2 oz chopped red onion

4 oz chopped red apple

2 oz chopped carrot

2 oz chopped celery

1 handful of chopped cilantro

1 tsp ginger

1 tsp curry or turmeric

1 tsp garlic

1 tsp salt

1 tsp pepper

1 squeeze of lime juice

1 tsp-1 TBS finely diced jalepeno (optional)

Chop all of your veggies. Add in any desired veggies or fruit you like. Mix the veggies, chicken, spices, and yogurt together. You can add more yogurt or ACV to make it the consistency you like. This stores in the fridge for a week and is easy to stuff into bell pepper halves or lettuce leaves. It is also excellent in a pita pocket. And....if you make our Thai Chicken Soup these use many of hte same recipes. You could meal prep the soup for dinners and these wraps for lunches with most of the same ingredients.
