Chicken and Broccoli Alfredo

 
 

This one pot pasta is loaded with protein, is packed with flavor, and it’s even better reheated the next day, so it’s perfect for meal prep!

Ingredients:

32 oz. boneless, skinless chicken breast, cubed

1 onion, chopped (8 oz)

16 oz. broccoli

2 c. chicken broth

3 T. butter

3 cloves garlic, minced

1/2 T. olive oil

1 c. milk (we used cashew milk)

3/4 c. shredded parmesan cheese (84g)

8 Laughing Cow cheese wedges (original flavor)

8 oz. penne pasta (we used Banza chickpea pasta for an extra protein boost)!

Salt, pepper, nutmeg

Instructions:

In a large pot over medium heat, cook the oil, onion, garlic, and cubed chicken. Once the chicken is cooked through, add the pasta and broth and stir well. Immediately place the broccoli over the top and cover with lid (do not stir-the broccoli will not be submerged in the water). Cook on medium heat for 10-12 minutes. Remove from heat and stir in butter, milk, cheese, a pinch of nutmeg, and season with salt and pepper. Enjoy! Serves eight.
