Black Bean and Mango Salad

 

This black bean and mango salad is the perfect summertime side dish to serve with pork tenderloin, chicken, or tossed into a salad! It’s easy to make and can be used throughout the week to mix things up a bit! ⁣

Ingredients:⁣

⁣250g mango (fresh or frozen/thawed)⁣

100g thinly sliced green onion⁣

455g black beans (one can)⁣

1 TBS extra virgin olive oil⁣

2 TBS fresh lime juice⁣

3 TBS chopped cilantro⁣

3/4 tsp salt⁣

1/4 tsp pepper⁣

2 TBS roasted tomatillo salsa⁣

45g dry wild rice or brown rice (we used @lundbergfarms organic wild rice)⁣

Instructions:⁣

⁣Cook rice according to package instructions. Combine all ingredients in large bowl and serve. Serves six.⁣
