One Pan Mexican Skillet

 

Here’s a dinner that can be ready in 20 minutes and uses basic pantry and freezer staples!

1 pound lean ground turkey (used 93/7)

1 can Rotel

1 packet Spanish rice

1.5 cups chicken broth

1/2 packet taco seasoning

Brown the turkey in skillet over medium-high heat and drain. Add remaining ingredients to the pan and combine. Bring to a boil and cover. Simmer over low heat for 10 minutes. Top with lettuce, pico, shredded cheese, avocado, sour cream, and tortilla chips depending on what macros you have to spare!
