Sweet Potato Toast
Sweet potato toast is a great high fiber, gluten-free addition to your morning breakfast or afternoon snack. Get creative with toppings, the possibilities are endless-from sweet to savory!
Cut sweet potato into 1/4 inch slices, spritz with cooking spray and salt and pepper, and bake at 400 degrees for 35-40 minutes....the toaster and air fryer work well too!
